This recipe is perfect for a summer cook-out at your local Ronald McDonald House or your own home! The combination of sweet, salty and spicy will have you and your family going back for seconds. If your kids don’t like spicy things though, don’t use the jalapeno. Just try some cracked pepper instead.
 
Watermelon Salad
Serves six
 
Ingredients:
Whole watermelon, cubed
1 tomato, chopped
1 small jalapeno, thinly sliced
6 ounces Feta cheese, crumbled
1 bunch of arugula
1 teaspoon fresh lemon juice 
Dash of salt
 
Directions:
In a large bowl, combine the watermelon, tomato, jalapeno, Feta cheese, lemon juice and salt. Toss to incorporate. Right before serving, toss the arugula into the salad.
